New Vegan Recipe - Bombay Potatoes and Peas

If my yummy vegan cooking has the powers of vegan conversion - so be it! I made this the other night and it was by far the best thing I've ever made in my life. My non-vegan husband loved it and can't wait until I make it again.

Of course I didn't follow this Vegan Richa recipe exactly. I don't think I have ever done that in my life, but my version turned out lovely.

I will definitely be making this for dinner guests in the future!

Life of a New Vegan

I'm really trying hard not to bore people with talk of becoming a vegan but believe me when I say people have a lot of questions for me.  And what's important to know is that I don't judge people for what they eat and I hope they don't judge me either. Food is complicated and loaded with issues.

And I try to get that point across right away when I start being bombarded with questions.  The other night I was at a dinner party and my sweet hosts went above and beyond and made me a vegan pizza. They even shopped for ingredients at the famous Herbivorous Butcher .

One of the dinner quests asks me why I decided to become vegan. I can still see her sweet, questioning face, earnestly wanting to know why someone would do such a thing.

I told her there were a lot of reasons but going vegan was mostly prompted by the election of Trump. I was devastated (and still am) and thought this is an opportunity to do more good, to make the world a better place because with Trump as president, it will only get worse.

So with each bite I take or rather don't take, I am helping animals and the environment.

I pretty much silenced the room.

I'm endlessly fascinated with how going vegan changes a person. Since I'm new to this and I was so sick for the past two weeks - which happened to be the starting point of my vegan lifestyle - I haven't really noticed any changes yet. But that could change quickly.

Anyway, I find Jenny Mustard both fascinating and a bit ridiculous. Regardless, she's got a lot of wisdom about following through with what you want to do and eating vegan. I love what she says in her video about veganism changing her body. Yay for her. And I hope the same for me!

New Vegan thought for the day

My life was forever changed when I took a class in graduate school where Holocaust survivors sat down with us and told us their stories.

Upon hearing their stories, like most people, I felt strongly that my problems and heartache were nothing compared to those of Holocaust survivors. 

And yet, what struck me was how often the survivors said that after they publicly tell their stories  audience members seek them out afterwards and say, "You described what it's like to be treated like an animal, worse than an animal and I understand in some small way." And usually the audience member would share their story of abuse, rape, incest, etc.

And when I happened upon the above quote by Chuck Palahniuk, I was struck again. And again, my problems and heartaches seem trivial to those who are truly suffering.
